Lemon Souffle – The Great British Bake Off Technical Challenge Recipe

This is the short version of the Lemon Souffle recipe that the bakers had to follow in the fourth episode of the Season 1 of the Great British Bake Off. This time they used Mary Berry’s recipe, so if you’re looking for the full one, go check out the recipe from here.

Some More Insights to the Challenge

The total time for the challenge is 40 minutes. This time we also see most of the recipe on camera. I deducted the additional missing pieces from the original recipe. This time the ingredients are not weighed before the challenge, so this is done during the time is running.

P.S. I haven’t added any pictures of the expected result for these challenge posts on purpose. It will be a lot more fun if someone finds the challenge and doesn’t know what the end result has to look like!


You’ll need:

  • Souffle dishes (ramekins)
  • Small pot and a whisk
  • A bowl
  • A mixer

Before starting…

  1. Set the timer to 40 minutes.

On your marks, get set… BAKE!

The Great British Bake Off logo



  • 25 g butter
  • 25 g plain flour
  • 140 ml milk
  • zest and juice of 2 large lemons
  • 100g caster sugar
  • 4 large eggs


  1. Cook butter and flour together in a saucepan.
  2. Add milk, beating all the time until thick.
  3. Beat in lemon juice and zest.
  4. Take off the heat and stir in sugar.
  5. Cool.
  6. Separate eggs.
  7. Add in egg yolks.
  8. Whisk egg whites and fold into the mixture.
  9. Pour into carefully greased and sugarcoated ramekins.
  10. Place onto a baking tray and cook until ready.
